Simple Summer Italian Potato Salad

Are you looking for an easy end of summer dish that’s fresh, flavourful, and made with simple ingredients? This Italian Potato Salad is a delicious, time-friendly alternative to traditional creamy potato salad. Whether you’re serving it alone, with friends/family, or as a side alongside your favourite dishes, this classic, easy Italian-inspired salad comes together wonderfully, especially when pinched for time.

Ingredients (for typically 2 servings):

  • 2 medium yellow potatoes
  • 1 cup cherry tomatoes, halved (one small container can work)
  • 1 medium red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • ¼ cup fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt

Instructions

  1. Heat a large pot filled with water on high, and cover with a lid. Bring to a boil, and add the potatoes (with the skin) once bubbling. Cover and cook until very easily fork-tender, about 15 to 20 minutes. Drain the potatoes and let them cool. Peel off the skin, and cut the potatoes into bite-sized pieces.
  2. While the water is boiling, thinly slice the red onion. Add them to a bowl, with 2 tbsp of red vinegar and a pinch of salt. Mix well (with your hands would be ideal!) in order to coat the onions. Set aside to pickle for several minutes.
  3. Cut the cherry tomatoes in half, and set aside.
  4. Pluck or chop approximately ¼ cup of basil leaves. Adjust to taste if desired.
  5. Pluck or chop approximately 1 tbsp of fresh oregano. Adjust to taste if desired.
  6. Once all ingredients have been prepared, combine the warm potatoes, cherry tomatoes, and pickled red onion in a large bowl.
  7. Drizzle with olive oil and sprinkle with salt. Adjust to taste if needed.
  8. Add the basil and oregano, then gently toss everything together until evenly coated.
  9. Let the salad sit for 10 to 15 minutes before serving so the flavours can blend.
  10. Enjoy as a stand-alone or side dish!

Helpful Tips

  • Put the warm potatoes in cold water and the skin should peel right off!
  • Toss the potatoes while they’re still warm so they absorb more of the olive oil.
  • Fresh basil and oregano provide the best flavour, but dried basil and oregano work just as well!
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Before serving, give the salad a stir and drizzle with a little extra olive oil if needed.
  • For extra flavours, you can add arugula, fresh mozzarella, spinach, olives, and/or capers.
