Can we believe it’s August!? I sure can’t. I am loving the warm air and flavourful local produce this time of year. What better to make flavours pop than these savoury easy meatball gyro bowls. Feta, fresh Ontario tomatoes, olives, tzatziki, hummus, oh my! Gyro is classically made from lamb or a lamb and beef mixture but I love using ground turkey. The options are endless, let’s get started!
Ingredients
For the rice
2 cups cooked rice- basmati, white, or brown
Lemon juice to taste, about 1 tbsp
For the meatballs
1 pound ground meat of choice- turkey, beef, lamb, pork
1/4 cup minced onion
1/4 cup crumbled feta cheese
2 cloves garlic, finely minced
1/2 tsp smoked paprika
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp onion powder
1/2 tsp salt
2 tsp fresh dill
2 tbsp bread crumbs
1 egg
For the bowls
1/4 diced red onion
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/3 cup kalamata olives
1/4 cup crumbled feta
1/4 cup tzatziki sauce
1/4 cup hummus
Olive oil to taste
Salt and pepper to taste
Directions
- Preheat oven to 425 Fahrenheit. Lightly grease a lined baking sheet.
- In a large bowl, combine meatball ingredients and form meatballs with hands. The mixture should make about 4-5 meatballs each bowl or 16-20 meatballs total. Evenly space meatballs on baking sheet and bake for 12-14 minutes or until cooked through and browned.
- Once rice is cooked, fluff and stir in fresh lemon juice and salt to taste.
- Divide rice among serving bowls. Top rice with meatballs, tomatoes, red onion, cucumber, olives, crumbled feta, tzatziki, hummus, a drizzle of olive oil, and salt and pepper to taste, or customize based on your favourites! Dig in!
