The second summer sheet pan meal is a spiced Chicken with feta and veggies. Great for those late evening meals because you are too busy playing outside! Grab your baking sheet and get the prep done in no time.

Spiced Chicken, Feta, and Veg Sheet Pan
Ingredients:
4 chicken breasts*
1/3 cup olive oil
4 cloves garlic, minced
1 lemon, juiced
1 tsp salt
1/2 tsp pepper
2 tsp dried thyme
2 tsp dried oregano
1 pound baby potatoes, cut into 1/2-1 inch cubes
1 pint cherry tomatoes
1 medium zucchini, halved lengthwise and cut into half moons
1/2 yellow or red onion, diced
1/4 cup feta cheese, crumbled
*Chicken breasts can be swapped with about 6 or 1 pound of boneless, skinless chicken thighs)
Directions:
1. Preheat oven to 400 degrees F. Lightly grease a large baking sheet with olive oil.
2. In a medium bowl, mix together olive oil, garlic, lemon juice, and spices. Add chicken breasts, baby potatoes, baby tomatoes, zucchini, onion, and drizzle with oil mixture to the baking sheet and toss to coat. Arrange in a single layer, with potatoes cut side down. Bake for 30 to 35 minutes, stirring after 20 minutes, until fork tender and chicken is cooked through. Sprinkle with feta cheese. Serve!
