The final sheet pan recipe is my favourite of the three. A juicy buttery salmon. I feel fish is very underrated meal option for many people. A lot of people have a hard time getting a serving fish in the week. Most fish options have such quick cooking time plus are versatile and jam packed with omega threes.
Now on with the recipe folks!
Ingredients:
4 fillets salmon
1 pound halved baby potatoes
1 pound asparagus (woody ends removed)
1 medium sweet red pepper, cut into 1 inch pieces
1/2 of a lemon juiced, rest for garnish slices if desired
1/2 cup melted butter
2 tbsp minced garlic
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Directions:
1. Heat oven to 400 degrees F. In a small bowl, whisk together garlic, melted butter, and olive oil. Put potatoes on a large baking sheet, drizzle with some garlic butter sauce and toss to coat. Cook for 15 minutes until beginning to soften and brown.
2. Carefully remove the baking sheet from the oven and push potatoes to one side. Place the salmon fillets in the centre and asparagus and red pepper to the remaining side. Rub salmon with about 2 tbsp of the garlic butter sauce and fresh parsley. Drizzle remaining garlic butter sauce over asparagus and peppers and toss to coat.
3. Squeeze or splash lemon juice over salmon, asparagus, and red peppers and garnish salmon with lemon sliced is desired. Season all with salt and pepper to taste. Cook for 10-12 minutes until veggies are fork tender and salmon is cooked through. Enjoy!
