You have likely tried corn chips, sweet potato chips, and the classic potato chip, but how about a spiced butternut squash chips? Take advantage of this amazing seasonal squash with these crunchy spiced butternut squash chips! This recipe makes approximately 2-4 servings.
Ingredients
1 butternut squash thinly sliced (approximately 4 cups)
For Regular Seasoning:
1 1/2 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
For Pumpkin Spice Seasoning:
1 1/2 tbsp olive oil
3/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp cloves
3 tsp sugar
1/4 tsp salt
Directions:
- Preheat oven to 400F. Prepare baking sheet with parchment.
- Remove both ends of butternut squash and peel skins (unless you want a more rustic taste). Once prepared, carefully cut the neck into thin slices.
- Transfer slices to a medium sized bowl and toss with olive oil until evenly coated. Place slices on parchment lined baking sheet in a single layer.
- Sprinkle slices with seasoning of your choice and toss. Bake for 22-35 minutes, until golden brown and hardened. The time will vary depending on the thickness of your slices. Let cool to room temperature.
