Summer Garden Hummus

If you are looking for a satisfying and delicious snack that incorporates healthy fats, carbohydrates, and protein all in one recipe, then this Summer Garden Hummus is the one for you! It is quick to prepare and easy to customize with your favourite vegetables and toppings to suit your preferences. It is perfect for sharing or meal prepping and pairs perfectly with pita bread, crackers, or fresh vegetables for a nourishing and fresh snack that helps to keep you energized throughout the day. 

Summer Garden Hummus Ingredients: 

Base:

1 can chickpeas, drained 

2 tbsp tahini

1 tbsp minced garlic 

1 tbsp olive oil 

1 tbsp lemon juice 

2-3 tbsp water 

½ tsp cumin 

pinch of salt 

Topping options:

1 cucumber, diced 

¼ cup black olives, sliced

4-6 cherry tomatoes, quartered 

½ cup bell peppers, diced 

¼ cup feta cheese 

Finishing touches: 

1 tsp sunflower seeds (optional) 

1 tsp balsamic glaze and/or olive oil

Directions:

  1. Add the chickpeas, tahini, garlic, olive oil, lemon juice, cumin, and salt to a blender/food processor
  2. Blend until smooth, adding 1 tablespoon of water at a time until the texture of the hummus is creamy.
    1. Adjust seasoning to taste if necessary. 
  3. Spread the hummus onto a bowl or serving plate. 
  4. Top with the diced cucumber, sliced black olives, quartered cherry tomatoes, diced bell peppers, and crumbled feta cheese. 
  5.  Finish with a light drizzle of balsamic vinegar, olive oil, and sunflower seeds (optional).
  6.  Serve with pita bread, chips, crackers, or fresh vegetables and enjoy!

This Summer Garden Hummus can be served and enjoyed immediately as an appetizer or stored in an airtight container in the fridge for up to 3 days, making it an easy snack to enjoy throughout the week.
