It is perfect for sharing or meal prepping and pairs perfectly with pita bread, crackers, or fresh vegetables for a nourishing and fresh snack that helps to keep you energized throughout the day.
Summer Garden Hummus Ingredients:
Base:
1 can chickpeas, drained
2 tbsp tahini
1 tbsp minced garlic
1 tbsp olive oil
1 tbsp lemon juice
2-3 tbsp water
½ tsp cumin
pinch of salt
Topping options:
1 cucumber, diced
¼ cup black olives, sliced
4-6 cherry tomatoes, quartered
½ cup bell peppers, diced
¼ cup feta cheese
Finishing touches:
1 tsp sunflower seeds (optional)
1 tsp balsamic glaze and/or olive oil
Directions:
- Add the chickpeas, tahini, garlic, olive oil, lemon juice, cumin, and salt to a blender/food processor
- Blend until smooth, adding 1 tablespoon of water at a time until the texture of the hummus is creamy.
- Adjust seasoning to taste if necessary.
- Spread the hummus onto a bowl or serving plate.
