Blueberry Bliss Snack Bites

Are you needing a quick snack that is flavourful and has a sweet taste of summer? Try these Blueberry Bliss Snack Bites. They are quick to make, require 7 ingredients and a food processor. I used frozen blueberries that my family picked at the end of the summer. This helped provide an intense flavour burst.

I also recruited my three year old in the process which was a bit messy in the end. I hope you enjoy these as much as we did.

Ingredients

1 1/2 c rolled oats

1 1/2 c shredded coconut (sweetened)

1 c frozen blueberries

20 dates pitted

1 tsp vanilla

3 Tbsp chia seeds

pinch of salt

Directions

  • Place all the ingredients in a food processor. Blend until it is very well blended and minced up.
  • Place parchment paper on a baking sheet.
  • Form batter into 2 inch balls and place on baking sheet.
  • Enjoy right away. You can also leave in the fridge for a week.
