They can be stored in the fridge or freezer, making them perfect for school or work mornings when you want something filling without having to cook from scratch.

Ingredients:
Base:
6 large flour tortillas
8 eggs
2 cups frozen hash browns, cooked until crispy
1 cup shredded cheese (any kind based on preference)
Salt and pepper, to taste
Filling options:
Option 1: Sausage, Eggs, Cheese & Hashbrowns
2 eggs, scrambled
½ lb turkey or regular breakfast sausage, cooked and crumbled
½ cup cooked hashbrowns
½ cup shredded cheese
Option 2: Veggie, Eggs & Feta
½ cup egg whites or whole eggs, scrambled
½ cup bell peppers, diced
½ cup spinach or arugula, chopped
¼ cup feta cheese
Option 3: Southwest
2 large eggs, scrambled
½ cup black beans, drained and rinsed
½ cup bell peppers, diced
½ cup Tex-Mex cheese (or preferred cheese)
Directions:
- Cook the frozen hash browns according to package directions until crispy. Set aside and allow them to cool.
- Crack the eggs (or just the egg whites) into a bowl and whisk together with a pinch of salt and pepper.
- Add the eggs to a non-stick pan over medium heat and cook, stirring occasionally, until just set.
- Try not to overcook the eggs since they will be reheated again later.
- Prepare whichever fillings you are using. Cook the sausage, sauté the vegetables, or rinse and drain the black beans as needed.
- Allow all of the ingredients to cool completely before assembling the wraps.
- This is especially important if you plan on freezing them, as warm ingredients can create condensation and make the tortillas soggy.
- Lay each tortilla flat and add a layer of scrambled eggs, crispy hash browns, cheese, or your preferred mix-ins to the centre.
- Fold in the sides of the tortilla and roll tightly into a wrap.
- Enjoy immediately or store for later!
To Store and Freeze:
These tasty breakfast wraps can be stored in an airtight container in the fridge for up to 3 days.
To freeze, allow all of the ingredients to cool completely before assembling the wraps. Wrap each breakfast wrap individually in parchment paper or foil and place them in a freezer-safe bag or container.
For the best texture, thaw the wrap overnight in the fridge before reheating. Reheat in a skillet, air fryer, or toaster oven to help crisp the tortilla and prevent it from becoming soggy. If using a microwave, remove the foil first and heat until warmed through, then finish in a pan or air fryer for a crispier outside.
Try to avoid adding watery ingredients, such as salsa or fresh tomatoes, before freezing. Instead, add them after reheating!
These tasty breakfast wraps are such an easy option to have ready for mornings when everyone is trying to get out the door.
